Fajita’s After the Flank Steak Night!

FAJITAS ON MONDAY NIGHT!

Another superb meal! So this is how it went on Monday, remember! The day after the flank steak perfection on Sunday night. I only made enough for 4 Fahita Taco’s. My wife ate one and I ate the other three plus finished the reminder of the pan. My leftover steak, remember it was very rare, it was about 4” x 5” x 1-3/8” thick. Just enough for two people. One of them got very stuffed! Har, that was me. Ingrediantes: 1 Med. Sweet Vidalia Onion 1 Green Chili Pepper, like a Hatch Green Chili 1 Orange Bell Pepper(you can use green or red) 1 Roma Tomato - cut into about 8 wedges. 2T of Olive Oil 1/2t of Cumin 1/2t of Chili Powder 1 Clove of Garlic, chopped Salt and Pepper 1 Lime, you need the juice from it. you will need Guacamole and some Sour Cream plus grated cheese Also a few slices of Jalapeño, I used some pickled Jalapeños from a jar, It was all I had on hand. Small Flour Tortilla Shells, near the end of cooking wrap them up in a clean dish towel and sprinkle some water onto the towel and microwave for about 30 second or so. They can be heated one at a time over a skillet also, or if you are brave drag them over an open flame on your stove for a minute or two. As you can see from the image at your right that this is what I had left over after chopping my vegetables you. Cut the onion across the grain (that’s top to bottom) into 1/2” slices. De-vein and de-seed the peppers and then slice up 1/4” to 1/2” wide. Place the cut onions, pepper and slices of Jalapeños in a bowl and then squeeze copious amounts of Lime Juice over them. Set aside for now. Pre-heat a cast iron skillet, make it hot! Then put in a table spoon of Olive oil into it and heat for about a minute (high heat) until just starting to smoke. I then sprinkled the Cumin, Chili Powder, Salt and Pepper and half of the garlic into the oil and then throw the Rare Grilled Flank Steak from the day before into the pan. I put the rest of the chopped garlic on top of the steak and I seared for about 4 minutes, then flipped it over for another 4 minutes. I then removed the steak from the pan and placed it aside for a bit. Next wipe out the hot cast iron pan with a few paper towels, careful remember the words “HOT”! Now add another tablespoon of olive oil to the pan and wait about a minute, High Heat again. Now throw in all the Vegetables that were drizzled with lime juice. Sear the onions and peppers, don’t overcook! After a few minutes remove the veggies and put back into the bowl I barely had time to slice my steak into very thin slices. Next throw the meat back into the hot pan. My meat was still a little pink so I cooked it a bit more and wanted to warm the meat back up. Next throw the veggies back in and heat them back up Throw those tomatoes in at the last minute, cook another 30 seconds or so to warm up the tomatoes. You are now ready to indulge! Place the Fajitas into a small flower shell. Spread some Guacamole and Sour Cream to taste and add shredded cheese to taste also. Dash your favorite hot sauce if desired. ENJOY! Mine turned out GREAT!!!!!!
